Three Tempting Recipes For Our Little Ones

Easy snacks for our little ones, that will bring smiles in those cute faces.

MANGO AND NUT CAKE

Cuisine: Indian

INGREDIENTS

  1. 1 cup unsalted butter
  2. 1 cup granulated sugar
  3. 2 mangoes (make pulp from 1 and cut the other into cubes)
  4. 2 eggs
  5. 1 tbsp vanilla essence
  6. 1 and 1/2 cup all-purpose flour
  7. Nuts (handful). Pistachios are best to add.

INSTRUCTIONS

  1. In a large mixing bowl, add butter and sugar. Now mix it to form a fine paste using a whipper or a blender.
  2. Now add the beaten eggs and cream together till smooth
  3. Next, add vanilla essence and the mango puree (3/4th cup). Beat well.
  4. Take a sieve and add the refined flour slowly to the creamy batter. In it, add the cut mango cubes and nuts of your choice. (I have used walnuts and almonds)
  5. Mix the batter and pour it into a lined loaf tin (Do not forget to grease the lined tin)
  6. Top it more with some nuts
  7. Put it in a pre-heated oven (10 mins) to bake it for 25-30 mins at 180 degrees C
  8. Once done, de-mould and enjoy spongy and yummy mango cake

BANANA OATS MUFFINS (In Air fryer)

Ingredients

1 cup oats

1 cup mashed ripe bananas

1/2 cup sugar

1 cup melted unsalted butter

2-3 tbsp flour (maida)

1/2 tsp baking powder

2 tsp almonds and walnuts finely chopped

Instructions

  1. In a mixing bowl, add butter, sugar, mashed banana, almonds and walnuts. Mix well.
  2.  In a separate bowl, mix refined flour, oats and baking powder. Add these dry ingredients in the above mixture and cut and fold the mixture 3-4 times.
  3. This batter will be thick. Grease muffin mould and put the muffin batter in each mould.
  4. In a preheated air fryer at 160 degrees, bake it for 10 min. Once baked, keep muffins in standby time for another 10 min.
  5. De-mould all the muffin and allow to cool down for 10 min.
  6. Serve it with hot beverages.

CHOCO CHIPS COOKIES

Ingredients

  1. 2 eggs
  2. 1 cup sugar powdered
  3. 2 cups all purpose flour
  4. 70 gm unsalted melted butter
  5. 2 tbsp any chocolate powder
  6. 1 tbsp coco powder
  7. Pinch of baking powder
  8. 2-3 drops of vanilla essence
  9. Choco chips

Instructions

1. In a large mixing bowl, beat the 2 eggs and add powdered sugar. Mix it well to form a fine paste.

2. Now add all-purpose flour and melted butter to the large mixing bowl (Step 1) and bring in all ingredients into a fine paste using your blender/spatula. Next, add chocolate and cocoa powder, vanilla essence, and a pinch of baking powder. Blend it again and put it in a fridge in an airtight container for 1 hour.

3. Pre-heat your oven for 4 minutes at 170 degrees C and in the meantime, bring out your tray, and lay the butter paper/parchment paper. Brush it with butter evenly.

4. Take out the cookie mould from the fridge, and give it the shape of a cookie. To do that, take small portions, place them between your palms and press. Now sprinkle Choco chips and press them lightly so that it does not come out.

5. Put the cookies in the baking tray for baking at 170 degrees for 20 minutes.

Note: Keep checking after 12-14 minutes while baking.
